Almond Butter Blondies (Vegan, Gluten-Free)
Ingredients
- 1 cup + 2 TBSP blanched almond flour
- 1/2 cup creamy almond butter
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted and cooled
- 2 flax eggs
- 3 tbsp almond milk
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions

Preheat oven to 350 degrees. Prepare an 8x8 baking pan by lightly greasing it with coconut oil.

Prepare flax egg by combining 2 tablespoons of flaxseed meal with 5 TBSP warm water. Leave to sit for 5 minutes until it thickens.

In a medium bowl, cream together almond butter, melted and cooled coconut oil, coconut sugar, and vanilla extract.

Whisk almond flour, salt, and baking soda together. Add this dry mixture to wet mixture and fold to combine. Add almond milk to help create the blondie batter, and finally add in flax egg.

Transfer batter to your prepared baking pan. Bake for 25-30 minutes until knife inserted comes out clean. It will look slightly underbaked, but that's okay!

Let cool for at least 30 minutes. Slice and enjoy!
Great recipe! I added some mini chocolate chips. I almost missed the baking soda addition as it was not in the instructions, just in the ingredient list.
