I must confess: I am a snacker. In fact, I am a champion snacker. I just love to eat, and try to find as many ways as I can to do it as frequently as possible. I have 12 snacks in my bag at a time, find reasons to go to grocery stores to find new snacks, and am a serial protein bar consumer. But when I have extra time, I feel it my duty to whip up some snacks of my own. I made these Coconut Almond Bliss balls on a whim, and because I wanted to test a recipe that was high in fat for sustained energy, and sugar-free to avoid the crash that snacks high in sugar tend to come with.
Store these in the fridge or the freezer for a cold snack or pick me up!Coconut Almond Bliss Balls (Vegan, Gluten-Free, Sugar-Free)
Ingredients
- 1/3 cup coconut flour
- 1/3 cup unsweetened coconut flakes
- 1/4 cup almond meal
- 1/4 cup raw almond butter
- 1/4 cup unsalted cashews
- 1/2 cup almond milk
- 1 tsp vanilla extract
- Dash cinnamon
Instructions

Blend all ingredients in a blender until dough is formed. You might have to scrape down sides of blender in order to get everything mixed well. Option to add chocolate chips, maple syrup, or dates for a sweeter bite! The dough will be a little wet, but that's okay. Form dough into balls and place in freezer - should freeze well in just under an hour. Thaw for a few minutes before eating and enjoy!
