I will take any excuse to put peanut butter on anything. But I’m not lying when I say this savory peanut sauce literally SHOULD be put on everything you eat.
This broccoli salad is the easiest meal or snack to make if you’re in need of a big bowl of veggies but don’t know how to dress it up so it doesn’t taste, you know, gross? I don’t know you guys, I am a huge fan of vegetables but if you give me a bowl of straight up steamed broccoli with no seasoning, yeah that’s gonna be a no for me dog.
This peanut sauce is so easy to make, you can do it with your eyes closed. But don’t, obviously.
All it is: some peanut butter, Tamari (you can use soy sauce too, but I chose Tamari for a gluten-free option!), sesame oil, rice vinegar, and a little bit of warm water to thin.
Broccoli Salad with Peanut Sauce
Ingredients
- 1-2 heads of broccoli
- 5 TBSP Peanut butter
- 1-2 TBSP Soy sauce (I used tamari which is the GF alternative)
- 1/4 TSP Toasted sesame oil
- 1 TBSP Rice vinegar
- 1/3 cup Edamame (I used crunchy, roasted)
- 1/3 Peanuts
- Black sesame seeds for garnish
Instructions
For the broccoli:

Boil broccoli for 1 minute and drain. Stir in a bit of salt and pepper. You can also stir fry or roast the broccoli in the oven if you prefer.
For the sauce:

Mix together peanut butter, tamari (or soy sauce), sesame oil, rice vinegar until smooth. You will need to add warm water to the sauce to thin, one teaspoon at a time until you reach desired consistency. Feel free to add 1 TBSP honey for a bit of a sweeter touch to the peanut sauce (this is more traditional, I chose to leave the honey out). Pour over broccoli and enjoy warm or chilled. Also note that the sauce can absolutely be to taste - if you want to add a bit more soy sauce or vinegar, do so! Enjoy!
