Hello readers, meet my Sunday morning ritual. And by Sunday morning ritual, I mean I eat them on Sundays and also frequently make at night to take to work the next morning…
These paleo pancakes are probably the easiest thing to whip up (you literally place all ingredients in a blender to make the batter…) and are amazing topped with caramelized bananas, maple syrup, and nut butter. Impress your friends, impress yourself, make these pancakes and feel like a gourmet chef. Did I mention they are gluten, and dairy-free? Now you know.
Caramelized Banana Paleo Pancakes
Ingredients
For pancakes:
- 1/2 ripe banana
- 1 egg + 1 egg white
- 1 TBSP coconut flour
- 3 TBSP oat flour
- 1/4 tsp vanilla extract
- 1/4 cup + 1 TBSP unsweetened almond milk
- Dash cinnamon
For caramelized banana topping:
- 1/2 ripe banana
- Coconut oil
- Cinnamon

Use a blender to blend all pancake ingredients together to create your batter! If you don't have a blender on hand, then you can whip all ingredients together, starting with mashing the banana, adding the wet ingredients, and then dry ingredients. Spray the pan with a coconut oil cooking spray. Pour batter onto the pan in 2 TBSP increments. Cook on low/medium as they cook fairly quickly.

In a separate small, shallow pan - heat up 1 TBSP of coconut oil. Using the other half of the banana, slice into coins and cook in the coconut oil until golden brown on each side. Dust with cinnamon as each side is cooking. Top pancakes with caramelized bananas and cinnamon. I also love adding peanut butter, almond butter, shredded coconut, or berries. Enjoy!
