I can find any excuse to have a cookie. Happy? Cookie. Mad? Maybe I should eat a cookie. Stressed? It’s time to bake a batch of cookies. Really, it doesn’t take much – literally number on the scale of emotions, and cookies are somehow involved.
But if you tell me it’s gluten-free, dairy-free, and has an extra boost of plant-based protein? Yo I’m even more inclined to take the whole batch.
I created these protein cookies with a base of cashew butter, not even a touch of oil, and with vanilla protein powder. I used ALOHA protein, but you can feel free to substitute your favorite vanilla protein powder! These are amazing for breakfast, a quick snack or pick-me up with coffee, or for dessert.
Cashew Vanilla Protein Cookies (Gluten-Free, Dairy-Free)
Ingredients
1/3 cup cashew butter
1 egg
1/3 cup coconut sugar
1/4 cup vanilla protein powder (I used ALOHA)
3 TBSP coconut flour
1.3 cup chocolate chips
1 tsp vanilla extract
1/4 tsp salt
1/8 tsp baking soda
Instructions
Mix together softened cashew butter, beaten egg, vanilla extract and coconut sugar until creamed. Add in coconut flour, protein powder, salt, and baking soda. Fold in chocolate chips. Form into cookies, and press down slightly as they won’t expand too much. Bake on 350 degrees for 11 minutes or until golden brown around the edges!
