Which is why I need to keep finding new ways to add it into my recipes and diet without just using a spoon as a vehicle. Which I really have no problem with, it’s just time I step up my game.
And these peanut butter cookies were born! They are dairy-free, oil-free, and gluten-free. They also use no refined sugar. Am I scaring you off? Wait! Wait! Come back! I promise they’re amazing…
These cookies call for no butter, flour, or oil – they are super easy to make (and even easier to eat!)
Peanut Butter Cookies (Gluten-Free & Oil-Free)
Ingredients
- 1 cup + 2 TBSP peanut butter
- 1 egg
- 1 cup coconut sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- Dash cinnamon
Instructions

Cream together the coconut sugar and egg until it is smooth. Add in the vanilla extract and salt. Then add in your peanut butter and stir well to combine. The dough will be sticky so you must refrigerate for at least 15 minutes. After refrigerating, spoon out 2 tablespoon amounts onto a lightly greased baking sheet or parchment paper. Bake for 10 minutes on 350 or until just browned around edges. You don't want to over cook because it's best for these to stay chewy in the center! Enjoy!!
