I am in love with almond butter in a way that I’d assume most people would call an obsession. I didn’t choose to be obsessed with almond butter! Okay, maybe I did. Sort of. With my countless trips to the grocery store to pick up the family size for my uh…family of one…okay okay, so maybe I do fuel my own obsession. But I can never have too much of this really good thing!
I decided to take my love for almond butter and use it to make my favorite dessert as of late: freezer fudge. There are many redeeming qualities about this freezer fudge. For one, the base is made from creamy almond butter, and it’s made perfectly sweet with just a touch of maple syrup. It’s vegan, and gluten-free, and comes together in just a few minutes with less than 10 ingredients. It’s also the perfect summer dessert because it is served chilled and lives in your freezer, so it’s great to prep for the week and know you’ll always have a sweet snack at home waiting for you. Not to mention, this is a no-oven-necessary recipe which is a pretty gorgeous thing in the summer heat.
In order to help this recipe come together, I added some of Pacific Foods’ Original Hemp Plant Based Beverage to the mix! Not only does it add a nice and creamy flavor, but it also makes it very easy to physically incorporate all of these ingredients together to ensure a very smooth and creamy freezer fudge batter. I’m really into Pacific’s products and the sheer variety of plant-based beverages and options that they bring to shelves and tables. And P.S. I also really love their unsweetened almond and oat varieties (which sub perfectly here as well)!
If you have followed me for literally any period of time, you know that I absolutely love to top everything with some flaky sea salt. Not only does a nice, crunchy salt really elevate a recipe, but it also works to both balance and bring out the sweetness. Not only did I (obviously) do that with this freezer fudge, but I also added in some cacao nibs for a bit of texture! They add a little something extra to complement the smooth almond butter and crunchy salt.

Salted Almond Butter Hemp Freezer Fudge with Cacao Nibs
Ingredients
- 1 cup creamy almond butter
- 1/4 cup maple syrup omit to make keto friendly
- 1/4 cup coconut oil, melted and cooled
- 1/4 cup Pacific Foods Original Hemp Plant-Based Beverage
- 1/2 tsp vanilla extract
- 3 tbsp cacao nibs, plus more for sprinkling on top
- flaky sea salt
Instructions

Prepare a 9 x 5 loaf pan by lining with parchment paper.

In a medium bowl, mix together almond butter, melted and cooled coconut oil, maple syrup, and vanilla extract. Mix together until smooth.

Add Pacific's Hemp Plant-Based Beverage to miture and stir to combine. Fold in cacao nibs.

Transfer freezer fudge batter to parchment lined pan and smooth out to evenly distribute the mixture throughout the pan.

Top with extra cacao nibs and flaky sea salt. Freeze for at least 1 hour.

Slice, and enjoy! Best served immediately, store in freezer.
