I love eating something that tastes really decadent but that I know isn’t bad for me. And that doesn’t necessarily mean it has to be vegan or gluten-free, because most of the time – especially when you eat out or check out the ingredients on certain said “healthy” grocery items, these dietary restrictions have to be compensated for with extra sugar, oils, and fake chemical substitutes.
I love fluffy, sugary, pancakes like the next person (because I’m human – and I don’t eat kale all day) but I don’t always feel awesome after I eat it. Which is why I created this recipe for the “everyday pancake” – something you can literally eat everyday, feel great about, and that contains only real ingredients. None of that fake stuff!
These pancakes are topped with a layer of unsweetened vanilla coconut yogurt, a dusting of cinnamon, and a sprinkle of granola that I like to add for texture. You can feel free to use your favorite yogurt, and I’d even recommend mixing a plain, unsweetened yogurt with your favorite nut butter and cinnamon.
Strawberries & "Cream" Paleo Pancakes
Ingredients
For pancakes:
- 1/2 ripe banana
- 1 egg + 1 egg white
- 1 TBSP coconut flour
- 3 TBSP oat flour
- 1/4 tsp vanilla extract
- 1/4 cup + 1 TBSP unsweetened almond milk
- Dash cinnamon

Use a blender to blend all pancake ingredients together to create your batter! If you don't have a blender on hand, then you can whip all ingredients together, starting with mashing the banana, adding the wet ingredients, and then dry ingredients. Spray the pan with a coconut oil cooking spray. Pour batter onto the pan in 2 TBSP increments. Cook on low/medium as they cook fairly quickly.

Top with strawberries, vanilla coconut yogurt (or yogurt of choice), and maple syrup. I also like adding some granola for crunch!
