There is no such thing as too much banana bread. So in that spirit, I give you my newest loaf love: Vegan Dark Chocolate Chunk Banana Bread.
Made with no eggs or dairy products, this banana bread is completely vegan and studded with delicious, melty 70% dark chocolate chunks. And if chopping that dark chocolate bar ain’t for you, feel free to swap out for your favorite chocolate chips or chocolate bar of choice.
I used one of my favorite unrefined sweeteners in this recipe: coconut sugar! It’s pretty unbelievable how easy this is to whip up – do you have 10 minutes to spare? Then run (don’t walk) to the kitchen and make this. I promise, you won’t regret it!! It makes the perfect breakfast, quick healthy snack, or coffee companion.
I love to top this loaf with some sunflower butter, and sprinkle with my favorite granola recipe.

Vegan Dark Chocolate Chunk Banana Bread
Ingredients
- 2.5 ripe bananas, mashed
- 1.5 cup spelt flour
- 5 tbsp melted, cooled coconut oil
- 1/2 cup coconut sugar
- 1/2 tsp baking soda
- 2 flax eggs (2 TBSP flaxseed meal mixed with 5 TBSP warm water, left to sit for 5 minutes)
- 1 tsp vanilla extract
- 1 bar 70% dark chocolate You can also use chocolate chips, or your favorite chocolate bar
Instructions

Preheat oven to 350 degrees, and grease loaf tin with coconut oil. Prepare flax eggs and leave to sit for 5 minutes.

In a medium bowl, mash bananas until smooth. In a separate bowl, combine spelt flour and baking soda.

Add coconut sugar, melted & cooled coconut oil, and vanilla extract to mashed bananas. Finally, add flax eggs to this wet mixture once they have thickened up (should take around 5 minutes).

Add flour mixture to wet ingredients and mix until thoroughly combined. Chop bar of chocolate, and fold chunks into batter (or alternatively use chocolate chips).

Transfer to prepared loaf tin or mini loaf tins. Add more chocolate chips to the top of the loaf/loaves. Bake for 30 minutes on 350 degrees or until knife/toothpick in center comes out clean!

I just prepared it and it is super yummy, I think I messed up something in the process because it is a little bit (well more than bit) dry but it taste very good, maybe the bananas were too small :/ I will try it again but with giant bananas.

Hey Trina! I like using almond flour! You can try 1:1 gluten-free flour but I’ve never used it in this recipe.
