Coconut Flour Chocolate Chunk Cookies (GF, DF)

  • 1/3 cup coconut flour
  • 1/3 cup cashew or almond butter, softened
  • 1/4 cup melted coconut oil
  • 5 TBSP maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/2 cup chocolate chunks I like to use a bar of 70% dark and chop it up!


  1. Preheat oven to 350 degrees. Mix together softened nut butter, maple syrup, beaten eggs, vanilla, and melted/cooled coconut oil. Add in coconut flour and mix until dough texture is achieved. Fold in chocolate chunks and roll dough into two inch balls, pressing each cookie onto a lightly greased baking sheet (they won't spread too much so I typically just press down on each of them gently). Press more chocolate chunks on top and bake for 10 minutes or until edges are golden brown. Cool for 5-10 minutes.
