Tahini Nut Energy Bites (Vegan, Keto-Friendly. Gluten-Free, Grain-Free)

Ingredients

  • 1/4 cup tahini
  • 1/2 cup raw cashews
  • 1/2 cup raw almonds
  • 1/2 cup unsweetened shredded coconut, heaping
  • 1 TBSP chia seeds
  • 2 TBSP cacao nibs
  • 1/4 cup almond milk
  • 1/2 tsp cinnamon
  • 5 medjool dates (omit to remain keto-friendly and sugar-free)

Instructions

  1. Toss all ingredients into a food processor or high speed blender, and process until only small pieces remain. 

  2. Form into balls. 

  3. Roll bites in cacao nibs and shredded coconut for added texture. 

  4. Store in the freezer and let thaw for 10 minutes before enjoying. They stay good in the freezer for weeks, but they will also remain good in the fridge for the week if you prefer a softer bite!
