Caramelized Banana Paleo Pancakes

For pancakes:

  • 1/2 ripe banana
  • 1 egg + 1 egg white
  • 1 TBSP coconut flour
  • 3 TBSP oat flour
  • 1/4 tsp vanilla extract
  • 1/4 cup + 1 TBSP unsweetened almond milk
  • Dash cinnamon

For caramelized banana topping:

  • 1/2 ripe banana
  • Coconut oil
  • Cinnamon


  1. Use a blender to blend all pancake ingredients together to create your batter! If you don't have a blender on hand, then you can whip all ingredients together, starting with mashing the banana, adding the wet ingredients, and then dry ingredients. Spray the pan with a coconut oil cooking spray. Pour batter onto the pan in 2 TBSP increments. Cook on low/medium as they cook fairly quickly.
  2. In a separate small, shallow pan - heat up 1 TBSP of coconut oil. Using the other half of the banana, slice into coins and cook in the coconut oil until golden brown on each side. Dust with cinnamon as each side is cooking. Top pancakes with caramelized bananas and cinnamon. I also love adding peanut butter, almond butter, shredded coconut, or berries. Enjoy!
