Strawberries & "Cream" Paleo Pancakes

Ingredients

For pancakes:

  • 1/2 ripe banana
  • 1 egg + 1 egg white
  • 1 TBSP coconut flour
  • 3 TBSP oat flour
  • 1/4 tsp vanilla extract
  • 1/4 cup + 1 TBSP unsweetened almond milk
  • Dash cinnamon

Instructions

  1. Use a blender to blend all pancake ingredients together to create your batter! If you don't have a blender on hand, then you can whip all ingredients together, starting with mashing the banana, adding the wet ingredients, and then dry ingredients. Spray the pan with a coconut oil cooking spray. Pour batter onto the pan in 2 TBSP increments. Cook on low/medium as they cook fairly quickly.
  2. Top with strawberries, vanilla coconut yogurt (or yogurt of choice), and maple syrup. I also like adding some granola for crunch!
