Peanut Butter Cookies (Gluten-Free & Oil-Free)

  • 1 cup + 2 TBSP peanut butter
  • 1 egg
  • 1 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Dash cinnamon


  1. Cream together the coconut sugar and egg until it is smooth. Add in the vanilla extract and salt. Then add in your peanut butter and stir well to combine. The dough will be sticky so you must refrigerate for at least 15 minutes. After refrigerating, spoon out 2 tablespoon amounts onto a lightly greased baking sheet or parchment paper. Bake for 10 minutes on 350 or until just browned around edges. You don't want to over cook because it's best for these to stay chewy in the center! Enjoy!!
