The OG Banana Bread

  • 1.5 cups Spelt flour
  • 2 large ripe bananas (the riper, the sweeter!)
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar (if you like a less sweet bread, then you can use just 1/3 cup maple syrup)
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • dash cinnamon (optional)


  1. Mix the flour, baking soda, and baking powder in a bowl. In a separate bowl, mash bananas until smooth, add in melted and cooled coconut oil, beaten egg, maple syrup, coconut sugar, and vanilla. You can feel free to omit the 1/4 cup coconut sugar if you prefer a less sweet bread - it still comes out great. Mix the wet ingredients into the dry. Bake at 350 degrees for approximately 35 minutes or until a knife inserted in the center comes out clean.
