The OG Banana Bread: Muffin Edition

Ingredients

  • 1.5 cups Spelt flour
  • 2 large ripe bananas (the riper, the sweeter!)
  • 1/4 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • dash cinnamon (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Mix the flour, coconut sugar, pinch salt, baking soda, and baking powder in a bowl. In a separate bowl, mash bananas until smooth, add in melted and cooled coconut oil, beaten egg, and vanilla. Mix the wet ingredients into the dry. Bake at 350 degrees for approximately 25 minutes or until golden brown around the edges.

Recipe Notes

Note that you can omit the egg for a vegan bread, with no issues!
