Almond Butter Stuffed Chocolate Covered Dates

  • 10 medjool dates
  • 1/2 cup chocolate chips (you can also use half a bar of your favorite chocolate instead)
  • 1 tbsp coconut oil
  • almond butter


  1. Pit dates

  2. Stuff each date with about half a tablespoon of almond butter. I love using maple almond butter here because it gives this snack such an amazing pop of flavor!

  3. In a small bowl, melt together the chocolate and coconut oil. I just popped mine in the microwave for about 15-20 seconds. 

  4. Roll each stuff date in melted chocolate until it is fully covered. 

  5. Sprinkle with maldon salt, or any fancy flaked salt. 

  6. Freeze for 25 minutes or until chocolate is firm.
