Almond Butter Blondies

These almond butter blondies melt in your mouth, are crumbly in all the right places, and absolutely delicious. They also happen to be vegan, gluten-free, and refined sugar-free, knowledge of which evaporates the second you take a bite!

ingredients//

  • 1 cup + 2 tbsp blanched almond flour
  • 1/2 cup creamy almond butter
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil, melted and cooled
  • 2 flax eggs (2 tbsp flaxseed meal mixed with 5 tbsp warm water, left to thicken for 5 minutes)
  • 3 tbsp unsweetened non-dairy milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

method//

  1. Preheat the oven to 350 degrees. Prepare an 8x8 baking pan by lining with parchment paper.
  2. Prepare flax egg by combining 2 tablespoons of flaxseed meal with 5 tablespoons of warm water. Set aside for 5 minutes until it thickens.
  3. In a medium bowl, cream together almond butter, melted and cooled coconut oil, coconut sugar, and vanilla extract.
  4. In a separate bowl, whisk almond flour, salt, and baking soda together. Combine the wet and dry ingredients. Add almond milk to help the blondie batter come together.
  5. Add in the prepared flax egg.
  6. Transfer the batter to your prepared baking pan. Bake for 25-30 minutes or until a knife inserted in the center comes out clean. It will look slightly underbaked, but that's okay!
  7. Let cool completely before slicing and serving.
