No-Bake Cardamom Date & Peanut Truffles
There are some dates that won’t let you down….like the ones in these NO-BAKE TRUFFLES!! Cardamom Date & Peanut — it’s giving Peanut Ladoo meets Peanut Butter Buckeye! here’s the perfect date you’ve been searching for… I had a lot of dates in my kitchen so I wanted to make something that evoked the feeling of my classic chocolate covered stuffed dates (in my cookbook), mixed with a peanut ladoo (a delicious peanut-based Indian dessert) — and voila, these truffles were born. You only need a few main ingredients to make these and everything comes together in a blender!! These are the dates that will have you going back for a second….third….and beyond…
ingredients//
- 10 medjool dates
- 1/4 cup roasted peanuts
- 1/4 cup peanut butter
- Pinch ground cardamom
- 1/2 cup chocolate chips
- 2 tsp coconut oil
- Flaky salt
method//
If your dates are a bit dry, soak them in hot water for 5-10 minutes to soften. Drain and add to a blender with roasted peanuts, peanut butter, and ground cardamom. Blend until a sticky dough is achieved.
Using about 1-2 tbsp amounts, form dough into balls. Place on a lined baking sheet and refrigerate while you melt the chocolate.
Melt the chocolate & coconut oil in 15 second increments in your microwave until smooth and glossy. Coat each date/peanut ball in the melted chocolate until completely covered. Place back onto the lined baking sheet. Sprinkle with flaky sea salt and refrigerate for at least an hour until chocolate has hardened. ENJOY!
